The amount of food that my son eats is truly amazing. I’m pretty sure he eats more than I do in a day … and he’s only one. When people see him eat, they cannot believe how much he is able to fit into his little body. It is impressive. He usually starts the day off with heaping handfuls of fruit. From raspberries to strawberries to blueberries, my little fruit fly cannot get enough of the sweet berries. So, naturally, we always have packages full of berries ready to eat in our refrigerator.
With so much fruit in our house on any given day, I try to take advantage of the situation and increase my fruit intake on a daily basis. What’s an easy way to enjoy more fruits? Add them to your cereal or make a berry and granola yogurt parfait.
While my son is enjoying his tray full of fruit, I fix myself a bowl of cereal or yogurt. I always top the bowl with a handful of blueberries that are bursting with flavor. As he crams handful after handful of food into his little mouth, I sit next to him and enjoy my breakfast while sipping on my morning coffee. I swear, it’s the perfect way to start the day.
After we’re done with our breakfast, we both feel fueled and energized to get in as much play time as possible before his first nap … and the next feeding time, of course. Yes, it makes me nervous about his teenage years and just how much he might consume. I’m afraid he’s going to eat us right out of the house.
He’s a growing boy and, thanks to my love of food, I couldn’t be happier that we share the same love and passion for good food.
Blueberry and Chocolate Chip Yogurt Parfait
- Blueberries, washed
- Mini Chocolate Chips
- Take a glass and add a few spoonfuls of yogurt to the bottom of the glass.
- Top the yogurt with blueberries and granola.
- Add two spoonfuls of yogurt on top of the blueberries and granola.
- Top the yogurt with more blueberries and granola.
- Sprinkle the top of the layers with a few mini chocolate chips.
