Caramel Sauce

When it comes to sundaes, there are chocolate people and then there are people like me...people who love caramel sauce. Unlike my husband, I've never been a huge chocoholic but pair chocolate with caramel and I'm sold. I have such an obsession with this flavor combination, especially when the chocolate is milky and the caramel is smooth.

My favorite way to enjoy these flavors is when they're combined with pecans. That's right, I'm talking about turtles. When it comes to these little gems of goodness, by all means, look out. My mom's friend creates homemade turtles around the holidays and I always look forward to receiving the package of chocolates. She includes her turtles that are, by far, the best turtles I have ever had. I love them so much that for our wedding shower, she made countless turtles and prepared them as party favors.

When I can't get my hands on her chocolate turtles, I know that my mother-in-law will come in to save the day. She is just as obsessed with chocolate turtles and, because we share the same obsession, she gives me boxes of turtles to help satisfy my craving. I told you I can't get enough of them, right?

I have never attempted to make turtles because I fear that nothing that I create can come close to the turtles that my mom's friend makes. However, I have come across a very delicious and smooth caramel sauce thanks to my friends over at Three Many Cooks.

Caramel Sauce

Ingredients:
  • 1 cup sugar
  • 1/4 cup water
  • 6 tablespoons butter
  • 2 tablespoons molasses
  • 1/2 cup heavy cream
Directions:
  1. Pour sugar and water into a saucepan and bring to a boil over medium heat and whisk constantly.
  2. Stop whisking and turn heat to medium-low and continue to boil until the mixture turns to a golden brown (10-15 minutes).
  3. Remove pan from heat and whisk in the butter and molasses.
  4. Whisk in cream.
  5. Cool to room temperature.

Well, my favorite chocolate sauce is a combination of chocolate, butter and pecans...and it hardens on ice cream. Even though this post does not include it because the original dish did not...I might (do) include homemade caramel sauce on it. Use semi sweet or milk chocolate chips; both divine!

I think if I had to choose I'd go for caramel sauce on my ice cream vs. chocolate sauce, but if I had it may way I'd have both!
