Old-Fashioned Soft Pumpkin Cookies

Halloween is quickly approaching and what better way to start the holiday weekend than to bake some delicious pumpkin cookies? I know you might be busy today running around buying candy to pass out to the trick-or-treaters, perfecting costumes and putting the final touches on your Halloween decor. However, these cookies are super easy to make…and I guarantee you already have a lot of the ingredients in your pantry.

So, when you’re out running last minute Halloween errands, make sure you pick up a container of Libby’s 100% Pure Pumpkin. All you have to do is combine all the ingredients in a bowl, bake for a few minutes and then drizzle the glaze over top. It doesn’t get much easier than that! Plus, the cookies will be a great addition to your Halloween dessert table and they will make your house smell like Fall!

Old-Fashioned Soft Pumpkin Cookies

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 1/2 cups granulated sugar
  • 1/2 cup butter, softened
  • 1 cup Libby’s 100% Pure Pumpkin
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Glaze (recipe follows)

Directions:

  1. Preheat oven to 350 degrees F. Grease baking sheets.
  2. Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl.
  3. Beat sugar and butter in a large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture.
  4. Drop by rounded teaspoon onto prepared baking sheets.
  5. Bake for 15 to 18 minutes of until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle glaze over cookies.

Glaze

Ingredients:

  • 2 cups powdered sugar (sifted)
  • 2 tablespoons milk
  • 1 tablespoon butter (melted)
  • 1 teaspoon vanilla extract

Directions:

  1. Combine all ingredients in a small bowl until smooth.

I hope many of you have a chance to bake these amazing, little treats. I have to stop by the store on my way home to pick up a few items for my costume…as well as a can of pumpkin so that I can bake this recipe tonight. These cookies will be nice treats to snack on all weekend.
