Over the past few weeks, my son has taken a huge interest in being in the kitchen with me. From preparing his snacks to cooking dinner, he loves pushing his step stool up to the island in order to watch me at work in the kitchen. I’ll even let him stir mixtures and pour in ingredients.

I wanted to introduce him to baking so I grabbed the Bob’s Red Mill Organic Unbleached White Flour from our pantry. Bob’s provides premium baking flours, no matter what kind of diet you follow. Bob’s Organic Unbleached White Flour is freshly milled from Organic hard red wheat. Both the bran and the germ have been removed leaving the endosperm that is made into white flour. It is not enriched with any additives.

Plus, this is the same high protein flour used by professional bakers and produces high, well-textured loaves of bread equally as well as it produces light, airy baked goods … in other words, this flour is the flour to use. Trust me, you don’t have to have a lot of ingredients to have food taste good. You just need a few good ingredients (like Bob’s) and you’ll have a dish your family will love.

When my three-year-old son woke up from his afternoon nap, I sat down and asked him, “Do you remember helping me stir the cookie ingredients?” He shook his head up and down. I replied, “Well, the cookies are ready. Here, try it.” His reaction was priceless. His eyes grew as big as saucers. I asked, “Do you like it?” He enthusiastically shook his head and immediately asked for a second cookie. He savored every morsel of the cookie … as did my husband and myself.

I love that this recipe only requires a few ingredients and steps in order to achieve a fantastic result. This is the perfect cookie recipe to always have on hand when baking with kids (they will love flattening the cookies). I can’t wait to have my son help me make this recipe again when we celebrate spring holidays such as Easter and Mother’s Day.

Ingredients
  1. 1/2 cup salted butter, room temperature
  2. 1/3 cup sugar
  3. 1 tablespoon vanilla extract
  4. dash of salt (1/16 teaspoon)
  5. 1 cup flour (preferably Bob’s Red Mill)
  6. 1 cup chopped pecans, chopped
Instructions
  1. Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  2. Whisk the butter using a whisk or a stand mixer for approximately 1 minute.
  3. Add the sugar into the whisked butter and whisk/mix for one 1 minute.
  4. Add the vanilla extract, salt, and flour into the butter mixture and whisk/mix for 1 minute.
  5. Fold in the chopped pecans.
  6. Use an ice cream scoop to portion out 12 clumps of the mixture.
  7. Roll each clump into a ball and place on the baking sheet.
  8. Flatten the balls using the bottom of a cup.
  9. Bake for 15 minutes.
  10. Remove the cookies from the baking sheet and transfer them to a wire rack. Allow the cookies to cool and then enjoy.
