Chocolate Chip Waffle Cookies

Leading up to our wedding, my husband took a look through our registry and could not understand why I had so many different types of cooking gadgets, kitchen tools, and pieces of china. He couldn’t wrap his head around the idea of us ever using anything that was listed on the registry.

Me, on the other hand…I could not wait to start playing with all of my fun, new, and exciting pieces of kitchen equipment. After creating our registry, my mind started racing at all of the endless possibilities of unique dinners that I could create using my new tools and different ways I could serve these dishes using the platters and china.

When we moved into our house shortly after our wedding, I began unpacking all of the wonderful gifts that we received from our wedding and designated a massive amount of cupboard space to the new kitchen gadgets. Throughout the years, I’ve experimented with the blenders, mixers, cookers, and griddlers but one of my favorite gadgets is the waffle iron.

Growing up, I always loved eating waffles and would order them whenever my family went out for breakfast. My favorite was a Belgian waffle drizzled with strawberry syrup and topped with whipped cream. To this day, I enjoy playing with the waffle iron because it not only reminds me of those great breakfast memories but also because the dishes that I can create are always so cozy and comforting.

Speaking of cozy and comforting, did you know that you can bake cookies on your waffle iron? Talk about amazing. To combine my love for waffles and chocolate chip cookies was definitely an “aha” moment for me and I cannot wait to make this recipe again. Preparing the batter takes less than five minutes and the bake time is less than two minutes. The result are these sinfully delicious and soft cookies that, when paired with milk, are heavenly.

Chocolate Chip Waffle Cookies

Ingredients:

  • 1/2 cup packed light brown sugar
  • 1/4 cup sugar
  • 1/2 cup butter, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup milk chocolate chips
  • Confectioner’s sugar (optional)
Directions:
  1. Preheat the waffle iron to medium heat and grease the iron.
  2. Combine the sugar, butter, egg, and vanilla in a large bowl. Gradually add the flour, salt, and baking soda to the mixture.
  3. Stir in the chocolate chips.
  4. Drop batter onto the waffle iron in tablespoonfuls (I like to use an ice cream scooper). 
  5. Bake for 1-2 minutes or until golden brown. 
  6. Remove cookies from the iron using tongs and place on a wire rack to cool. Dust with confectioner’s sugar (optional).

  1. I love my vitamix and kitchen aid. And springform pans. And rubber spatulas. Do mason jars count as a gadget, because I love those too. Clearly I don't have just 1 favorite ;) I don't even own a waffle iron though, gaaaasp!

  2. These are just too adorable, I had no idea you could bake cookies in the waffle iron pan? What? Growing up it was such a treat when I visited my family, the lived on this huge country farm and having waffles or pancakes with chocochips… divine.

  3. I am so impressed… The waffle iron is my *least* favorite kitchen appliance because I am constantly overflowing it with waffle batter all over my counter tops. These cookies, however, could remedy that for me. They are amazing!!

  6. I LOVE this recipe! Tonight I decided to make these (yet again) and decided to experiment. I used 1/2tsp vanilla extract and 1/2tsp anise extract, 1/2 tsp anise seed, and substituted the chocolate chips with toasted almonds. They are SO tasty. You should give them a try. Perfect with a cup of coffee. :)

  9. I tried these in a belgian waffle maker and could not get them out! They weren't sticking, they were crumbling all apart when I tried to remove them. I used already prepared cookie dough and sprayed pam on the iron but they just wouldn't come out. The large crumb chunks were pretty good though! HELP! What did I do wrong?

    • Same thing with mine. Guess u can’t use a belgin waffle maker. My granddaughter was so disappointed but still eating them with a spoon

  10. omg these are amazing!! super easy and fast to make. i made them for a good-bye brunch for a coworker and they were a huge hit! I do suggest placing small spoonfuls, they grow large and can be dense. seriously though, make them now!

  11. hi there…. hmmmmmm your waffels look so yummy. the recepe looks so easy but I have on big problem here. in France we use grams not cups. how I can know haw many grams is in a cup????

  12. Hi! I followed the recipe and they stuck to the waffle iron. The broken pieces were yummy so I can see the potential, but even with a heavier greasing and playing with the time-to-bake, they continued to stick. Putting it in the fridge for a while to make it harder seemed to help a tiny bit. Any ideas as to why it may be sticking? What type of waffle iron do you use? I don't want to give up on these!! Thanks.
