Chocolate Chip Pancakes

Do you know what Mardi Gras (aka Fat Tuesday) and Shrove Tuesday have in common? Today, as in the Tuesday before Ash Wednesday. According to the Christian calendar, today is the last hurrah before Lent begins on Ash Wednesday. Whether you call it Mardi Gras or Shrove Tuesday, one thing is certain, I’m sure many of you are trying to squeeze in as many goodies as you can before Lent begins.

Making and eating foods with ingredients such as sugar, fat and eggs, whose consumption was traditionally restricted during the ritual fasting associated with Lent, is what led to also calling this day Pancake Day. That’s right, today is a day to celebrate the light and fluffy pancake.

When making pancakes from scratch, all you need are a few simple staple ingredients that you probably already have in your pantry and refrigerator: flour, baking powder, salt, sugar, milk, egg, butter and your favorite goodie to fold into the batter right before pouring it onto a hot griddle. The following is my go-to recipe for light and fluffy pancakes, with a few (OK…maybe a lot) of chocolate chips. Hey, it’s Mardi Gras after all! Happy Fat Tuesday!

Chocolate Chip Pancakes

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted 
  • 1 cup chocolate chips

Directions:

  1. In a bowl, mix together the flour, baking powder, salt and sugar.
  2. In a separate bowl, whisk together the milk, egg and melted butter.
  3. Mix the dry and wet ingredients together and whisk until incorporated.
  4. Fold in the chocolate chips.
  5. Warm a greased griddle or frying pan over medium heat.
  6. Pour the batter onto the warm and greased griddle and brown on both sides. Rule of thumb: Once the pancake begins to bubble around the edge it’s ready to flip.

  1. Now, I never followed with the pancake tradition…but you best believe I crammed in as many goodies as possible for FAT Tuesday. These pancakes are kinda making me wish I'd included pancakes in the festivities though…they look absolutely scrumptious!

  2. Great pancakes, but a little too salty. I don't think you need to add the salt with all the baking powder in there. Had them this morning and the kids loved them. Thanks!

  4. TOO MUCH BAKING SODA

    I made them to the recipe and they tasted of baking soda. Use maybe ONE teaspoon? Not 3.5

    I spent ages making them and had to throw them away.

    PLEASE amend this recipe!!
