Paprika, Basil and Garlic Red Skin Potatoes

This past weekend, my husband and I met up with my brother and his wife in Orlando, Florida to ring in the New Year and to cheer on our Michigan State University Spartans in the Capital One Bowl Game. My husband and I arrived a bit earlier than my brother and his wife so we decided to check out Orlando, grab a bite to eat and walk around our resort where we ended up finding one of my favorite things in the world…a hammock. We lounged away a good couple of hours and then headed up to our room to prepare for the insane New Year’s Eve celebration that was about to take place. Let’s just say that Church Street in Orlando, FL is absolutely nuts on New Year’s Eve…and it resulted in quite a night for the four of us. We even ran into some super friendly Alabama fans who were kind enough to invite us to ring in the New Year with them at their table (Dear new Alabama friends: If you’re reading this, thank you for the Sabanades that kicked our butts).

After the insanity that was New Year’s Eve, we all woke up a bit on the groggy side, covered ourselves in green and white gear and headed to the game. We had a great time tailgating with MSU friends of ours and after a couple of “hair of the dog” cocktails, entered the stadium to find out that our seats were basically on the field. I didn’t think that things could get any better…and then they didn’t. Please excuse me while I skip right over the part where Alabama gave our Spartans a royal beating (*roll tide*).

The rest of the weekend consisted of spending time at the pool, enjoying cocktails, playing putt-putt (yes, I won for the first time ever), eating delicious food and laughing so hard we cried. It was such a great trip and I’m so happy that we were able to spend time with my brother and his wife. Things always seem to have a way of getting a little crazy when the four of us are together…and I loved every minute of it!

When we returned home (after almost missing our flight…yes, we were those people running through the airport…they even had to re-open the gate for us), my husband and I kicked up our feet, cuddled with the dogs and relaxed the entire afternoon. Last night, since my husband was away from his grill for what seemed liked ages to him, he was craving quality time with his baby so we went to the store and picked up items for a little BBQ. We had winter salad, grilled chicken marinated in red wine shallot sauce, corn on the cob and these out-of-this-world Paprika, Basil and Garlic Red Skin Potatoes.

Paprika, Basil and Garlic Red Skin Potatoes

Ingredients:

  • Bushel of baby red potatoes (15-20 potatoes)
  • 3 tablespoons butter, melted
  • 1 tablespoon dried basil
  • 1 tablespoon paprika
  • Pinch of garlic salt
  • Pinch of pepper

Directions:

  1. Fill a large pot with water and bring to a boil.
  2. Scrub the potatoes clean and place into the boiling water.
  3. Cook for 15 minutes or until the potatoes become soft and then remove from the water. Place the potatoes in a serving dish.
  4. Mix together the butter, basil, paprika, garlic salt and pepper and drizzle over the potatoes and serve warm.
